Tied for my favourite recipes for the Advanced Chef Day were the unroasted tomatoes and Boston meringue. The Grezzo cheese was a close second! Everything was great, except I personally did not care for the croutons. The most enjoyable part of this experience was that I now have more meal options. There was a good balance of pre-prep and hands-on for the number of recipes. It was good working with Patsy. She has lots of energy to keep us going, a great knowledge level and experience. She is also open to other ideas. Before this course, I was turned-off thinking how much work eating raw would be...but no complaints now! Most of my friends don't do raw vegan YET! It is very difficult to pick an absolute favourite from the Advanced Chef Day, as all were delicious, but it was great learning about fermenting, and especially delicious was the unroasted tomatoes and Boston meringue. Patsy is a very gracious teacher. She takes the time to teach and clarify instructions for the hands-on experience. So nice to learn chef skills while preparing a variety of dishes directed and demonstrated by Patsy. I found it very enjoyable due to the hands-on experience and a small group. Tasting each and every dish was definitely my favourite thing! Patsy is amazing! She is very organized, knowledgeable, patient and she makes the day very enjoyable. When you spend the day with Patsy, you learn a lot, eat delicious food and learn by doing a lot of hands-on work. Patsy is very knowledgeable about what the body needs to be healthy. Several years ago , I’d had just come home from having pre-cancerous lesions removed, and the next day they were surfacing again. I thought I was eating right. You know, just white meat, rice and cooked vegetable, and using my Jack LaLanne juicer to make large glasses of delicious apple juice. Patsy loaned me the God’s Way to Ultimate Health book, by George Malkmus of the Hallelujah Diet, and I just “devoured it”. It was a brand new way of thinking and being for me. It made sense. I was hooked! I started right away to change my lifestyle and the way I ate. The tumours disappeared on their own…no further surgery. Sadly, I must admit that years later, I slid back into my old ways and now am sporting just half of my colon due to colon cancer. Today, I stand committed. I signed-up to spend six-months with Patsy mentoring me. To guide me and hold me accountable as I make lasting habitual changes that I can live with for the rest of my life. I am already feeling more energetic…it is working! After only two months, I had lost 15 lbs and due to the cleanse and juice fast Patsy coached me through, three weeks later I had lost a total of 28 lbs, woo-hoo! Finally taking a few moments to drop you a huge Thank You for the wonderful Workshop last Sunday. It was very informative, so helpful to see the items produced and then to taste them freshly made. You truly are an inspiration. I was reluctant to go forth on this new adventure. It is not easy, it is expensive, some tastes perhaps need to be acquired much like turnip or liver. Our health is of vital importance and if comprised we have two choices. Continue down the slippery slope or take action. I am determined to fight. What a wonderful two days of information that supports a "Raw Living Food" lifestyle for Level II. Patsy provided great instruction and encouragement while we prepared the various raw dishes. Each meal, breakfast, lunch and supper were elegantly presented. I finally understand the use of sprouting and how to incorporate them into many different recipes. During the breaks I enjoyed her lovely garden, such a peaceful setting. We had an opportunity to hear motivational speakers and time to refresh outdoors on our walk through the community. It was a magical day! I really enjoyed learning all those new recipes. And guess what...when I got home my husband and son both LOVED the food. They said it was amazing. The two-day course was overflowing with information, recipes, excellent food to eat, including much learning material to bring home at the end. I learned a great deal! My questions were answered with diplomacy and an extensive base of knowledge, in a language that I could easily understand. There were videos to watch, all of which had been well researched. They were informative and interesting. At the end of the course, a review was conducted, tying a nice blue ribbon around the whole package. To a prospective student of raw food classes - My experience with Patsy Scott when I took my Raw Food Chef class with her is the following: I found her to be punctual, totally prepared, organized and professional. She was structured and went step-by-step. In my opinion, she was very clear and always on point. Her venue was spotless and organized. Her level of cleanliness was very comfortable to me. I received a folder with very valuable information and also all the treasured recipes we made during class. The recipes were absolutely delicious and I could feel how satisfying they were. She used organic vegetables for us when available, which I really appreciated. Her portions were more than generous, and her generosity is big. I find her personality to be very compassionate, and she had complete integrity in all that she did with me. I encourage any student who is considering her raw classes to jump in! You will leave understood, inspired, uplifted, educated and full. She provides on-going support for those who wish to further their education. She has books, tools, equipment, and all sorts of supports to help you on your journey, but she doesn't push. You buy when you are ready. I am glad I met Patsy by accident. I came to Patsy's class to get back on track with diet. Sitting in front of the computer had sucked up my energy. I became very sedentary, and gained 40 pounds! So I knew the only way, was to get inspired about my health and diet from someone who is excited about health. The Level 1 class gives you so much variety in ways to prepare meals. I loved it! It is so much better to learn from someone who is into eating healthy as a way of life. I also saw what to do first hand, and then tasted, and realized that you are FULL from eating just RAW FOOD. The lecturer, Barb O'Neill, Naturopath and Nutritionist from Australia, spoke in layman's terms was informative and concise. When I signed up for the course it wasn't my intent to really take this on like I have. But at some point during that day something inside of me 'clicked,' and I've really taken to this whole raw food thing. I'm doing the juicing, the green juice before meals, dehydrating fruit and nuts and crackers for snacks, etc. My body just feels so much 'happier' this way. I'm really glad I did the seminar, and I think that the timing was key. If I had done it earlier I don't think I would've taken to it the way that I have. Patsy presented "God’s living food" lifestyle to our Catholic Women’s League council meeting (about 20 ladies), as well as preparing and explaining the benefits of healthy snacks. I had an awesome time at your place Thursday and Friday. I can't believe how much I learned, how wonderful the raw food tastes and how much energy I have now. I woke up at 5:30 am and usually its around 7 am. I'm excited about health too. I am stunned with how great the onion spread tastes with the bagel. I don't know where to start...the bagel or the enchilada or the avocado skins. I really want to make your chocolate cake with the strawberry sauce for my mom for Mothers Day and was wondering if I could bother you again as to how you made it. I tried making the strawberry sauce but mine was too thin. I made the Chia Pudding which was delicious. I forgot to buy the olive oil so I will get it at my next course. David & I just returned from a drive and passed your home; south on Mill to Bond Head and to Lakeshore. It is an area that we both love - especially in the summer spending time at the lake. Before we returned home we stopped at Freshco to pick up a few "healthy" things. When we reached the cashier there was a bit of a line up and while I put our items on the belt, David went to pick up some water bottles (sorry, it is spring water, not distilled!). Anyhow, a gentleman in the line ahead of us saw our items and commented on our "healthy" foods versus his "not-so-healthy" food items. We talked about your informative seminar on raw foods and how inspiring it was. He was keen on hearing more so David took his email address and is emailing him with your website to peruse for more information. I add this side story to say that when the student is ready, the teacher appears. Our sincere thanks for a tremendous experience this past Sunday. We thoroughly enjoyed the food, the company and of course, the invaluable information. Our goal is to slowly travel on the path of natural healing aided by the vitality of "live food". My taste-buds are dancing! Prior to taking Patsy's Level I certification course, I had started incorporating more raw foods into my diet and was pleased with what I was tasting. But once I tried Alissa's recipes, it took my taste-buds to a whole new level!! The foods were so tasty and satisfying that I did not feel deprived at all. This quotation brings to mind the wonderful day I had learning about Hallelujah Acres and the Optimal Health Solution from an inspiring woman, Patsy Scott. The day went by so quickly. I learned amazing facts and ate delicious meals and snacks! I left energized that evening eager to start on the road to my optimal health. I began that very evening and am still excited about this adventure. What a thrill it was for me to hear "6000 health ministers worldwide proclaiming the answer to disease" especially since I have experienced GOD'S HEALTH PLAN at work saving my life over the years previously from a precancerous blood condition (MGUS- 30% of the population with MGUS developing multiple myeloma or lymphoma). Also with GOD'S HEALTH PLAN, I have avoided both coronary angioplasty and/or coronary bypass for a 100% blocked right coronary artery. I have no angina or coronary medications. Prior to applying God's plan, I had four medications and angina when I was originally diagnosed with low blood pressure. It appears my heart disease was caused by severe stress over many years. Due to an anaphylactic reaction to radiopaque dye in the past for a back injury testing, I was reluctant to have coronary angiograms. However with Prednisone and Benadryl, the Sunnybrooke angios showed the blockage. However it also revealed sufficient collateral circulation overcoming the blockage, accomplished over the years with exercise and God's plan. Hallelujah! - Linda Stevenson, Oshawa, ON

Cindy Suppan was also quite excited after attending the seminar. She has reported that she lost 6 lbs without trying (including 3 lb. of fat and no muscle tone). A local businessman (who prefers to remain anonymous) had a doctor's appointment where his test results had concerned the doctor. A follow-up appointment was scheduled to determine if he was diabetic. His sister is also diabetic, so this concerned him greatly. He attended my seminar and started immediately to follow the principles as best he could. After the follow-up appointment, it was determined that his statistics had changed. There was no evidence of diabetes! As well, his blood pressure had almost returned to normal. He is also finding relief from his gout. - Anonymous
