This is an intensive learning experience that packs a lot of information into four transformative days...from beginner to advanced! During this retreat you will learn how to go raw and stay raw. You will learn the tools and techniques to prepare simple, delicious, gourmet foods for yourself, family and friends. And if you desire, be certified as a Raw Food Chef and Instructor, so that you will be able to teach others how to become healthy and vibrant. Both newcomers to this lifestyle and experienced participants, feel comfortable in Patsy's kitchen. Everyone loves the intimate groups, which allows for the ultimate hands-on food preparation experience!
This is such an exciting retreat introducing all you need to know about the raw food diet, sprouting and dehydrating. Day one is a whirlwind of easy delicious recipes; while during the next two days, we prepare our own meals from Alissa's 300-page recipe book, Living on Live Food, such as: enchiladas, calzone, bagels & onion dip, pizza, avocado "skins", plus bonus recipes.
We will learn how Alissa's sister cured herself from lead poisoning through the use of various detox techniques.
The advanced day includes a full-day of hands-on preparation, and learning chef techniques. The gourmet recipes were chosen from Alissa's second book, Raw Food for Everyone, which were used in her raw, vegan restaurant, Grezzo, in Boston, MA, (such as muddled blueberry pancakes with coconut cream, which are served for breakfast). You will also prepare easy delicious ferments, that you will take home and culture on your own kitchen counter. Total cost for this 4-day retreat is $2,400 CDN or $2,800 CDN, if you desire certification as a Level I Raw Food Chef and Level II Instructor. (Alissa taught this class in Massachusetts for $2,400 USD.) Includes handout of materials and recipes, as well as Alissa's Living on Live Food recipe book and DVD set. If you choose to be certified, you will be registered with Alissa Cohen, who will directly issue your certificates. This whirlwind training is the fundamental course that will teach you the basics of the raw food diet through the teachings of the Living on Live Food plan.
If you choose certification, you will be recognized as a Certified Living on Live Food Raw Food Chef and will be able to teach courses and workshops as a certified raw food chef!
This level is designed to go beyond the basic food preparation and into more extensive raw food skills such as sprouting and dehydrating. From this course you will be proficient in preparing elegant gourmet meals. In addition to food preparation, and breakfast, lunch and dinner both days, this course will cover:
If you choose certification, you will be recognized as a Certified Living on Live Food Instructor and will be able to teach individuals and groups in the art of raw food preparation and the raw food lifestyle. You will be able to teach the Living on Live Food "Chef" Certification - Level I course.
The Level III "Advanced Chef Day" recipes have been selected from Raw Food for Everyone, by Alissa Cohen and Leah J. Dubois, as the most popular recipes from their fine dining, raw vegan restaurant, Grezzo, in Boson, MA, which closed in 2010. (Grezzo is Italian for "raw".) In this class, you will experience outstanding blueberry pancakes with coconut cream, gelato with caramel sauce and an absolutely, unbelievable Boston meringue! As well, we create recipes to substantially enhance your salads, including: breadsticks, croutons, Grezzo cheese and “unroasted” tomatoes. In addition, you will prepare and take home easy delicious ferments: French carrots, sauerkraut and pickled beets to ferment on your own kitchen counter. Certification: By taking Level III with Patsy, you will learn everything taught by Alissa Cohen and be able to branch out on your own as a certified raw food instructor with advanced training. (However, the "Level III Teacher" certificate is only available if the course is taken in Alissa's course in the United States, where you will then be a Certified Living on Live Food "Teacher ", able to teach the Living on Live Food "Chef" Certification - Level I course and the Living on Live Food "Instructor" Certification - Level II course.)
Tied for my favourite recipes for the Advanced Chef Day were the unroasted tomatoes and Boston meringue. The Grezzo cheese was a close second! Everything was great, except I personally did not care for the croutons. The most enjoyable part of this experience was that I now have more meal options. There was a good balance of pre-prep and hands-on for the number of recipes. It was good working with Patsy. She has lots of energy to keep us going, a great knowledge level and experience. She is also open to other ideas. Before this course, I was turned-off thinking how much work eating raw would be...but no complaints now! Most of my friends don't do raw vegan YET! It is very difficult to pick an absolute favourite from the Advanced Chef Day, as all were delicious, but it was great learning about fermenting, and especially delicious was the unroasted tomatoes and Boston meringue. Patsy is a very gracious teacher. She takes the time to teach and clarify instructions for the hands-on experience. So nice to learn chef skills while preparing a variety of dishes directed and demonstrated by Patsy. My favourite recipes from the Advanced Chef Day were the Grezzo cheese, basic gelato, "unroasted" tomatoes, and fermented veggies. I found it very enjoyable due to the hands-on experience and a small group. Tasting each and every dish was definitely my favourite thing! Patsy is amazing! What a wonderful two days of information that supports a "Raw Living Food" lifestyle for Level II. Patsy provided great instruction and encouragement while we prepared the various raw dishes. To a prospective student of raw food classes - My experience with Patsy Scott when I took my Raw Food Chef class with her is the following: I found her to be punctual, totally prepared, organized and professional. She was structured and went step-by-step. In my opinion, she was very clear and always on point. Her venue was spotless and organized. Her level of cleanliness was very comfortable to me. I received a folder with very valuable information and also all the treasured recipes we made during class. The recipes were absolutely delicious and I could feel how satisfying they were. She used organic vegetables for us when available, which I really appreciated. Her portions were more than generous, and her generosity is big. I came to Patsy's class to get back on track with diet. Sitting in front of the computer had sucked up my energy. I became very sedentary, and gained 40 pounds! So I knew the only way, was to get inspired about my health and diet from someone who is excited about health. The Level 1 class gives you so much variety in ways to prepare meals. I loved it! I had an awesome time at your place Thursday and Friday. I can't believe how much I learned, how wonderful the raw food tastes and how much energy I have now. I woke up at 5:30 am and usually its around 7 am. I'm excited about health too. I am stunned with how great the onion spread tastes with the bagel. I don't know where to start...the bagel or the enchilada or the avocado skins. I really want to make your chocolate cake with the strawberry sauce for my mom for Mothers Day and was wondering if I could bother you again as to how you made it. I tried making the strawberry sauce but mine was too thin. I made the Chia Pudding which was delicious. I forgot to buy the olive oil so I will get it at my next course. My taste-buds are dancing! Prior to taking Patsy's Level I certification course, I had started incorporating more raw foods into my diet and was pleased with what I was tasting.
